  • Bacon80g
  • Garlic1 clove
  • Olive oil1 tbsp
  • Heavy cream100ml
  • Milk100ml
  • Salt and black peppera pinch

  • ★Parmesan cheese (or non-melting sliced cheese)4 tbsp (2-3 slices)

    Mix together the ★ ingredients: 2 egg yolks, 4 tbsp (2-3 slices) Parmesan cheese (or non-melting sliced cheese), and 1 tbsp milk. Set aside.

    Mince 1 garlic clove and heat 1 tbsp olive oil in a frying pan over low heat. Sauté the garlic.

    Once fragrant, add 80g bacon and lightly cook until done.

    Add 100ml heavy cream, 100ml milk, and a pinch of salt and black pepper. Heat over medium heat. If using sliced cheese (2-3 slices), add it now to melt.

    Boil 180g pasta 1 minute less than the package directions, drain, and add to the frying pan. Toss with the sauce.

    Remove from heat and wait 30 seconds. Gradually add the reserved ★ mixture while stirring well to combine.

    Once everything is well combined, transfer to a plate. Sprinkle with black pepper to taste and serve.

Tips

Boiling the pasta 1 minute less than directed will help the sauce coat better.
