Kinpira-Style Burdock and Carrot (Burdock Kinpira)

This hall-of-fame kinpira is absolutely irresistible! The burdock and carrot have such a perfectly sweet and savory flavor. Perfect for rice bowls and bento boxes!

  • Burdock root1
  • Carrot1/2
  • ★Sesame oil1 tbsp
  • ★Sake2 tbsp
  • ★Mirin2 tbsp
  • ★Soy sauce1.5 tbsp
  • ★Sugar1 tbsp
  • ★Dashi powder (granulated Japanese dashi)1/2 tsp
  • ★Sesame seeds1 tbsp

    Cut 1 burdock root and 1/2 carrot into thin julienne strips. Briefly soak the burdock in water and drain well.

    Heat 1 tbsp sesame oil in a pot and stir-fry the burdock and carrot.

    Once they begin to soften, add the ★ seasonings and simmer-fry until the liquid reduces and a glossy glaze forms.

    Finish by adding 1 tbsp sesame seeds and toss everything together. Done!
