Tender Nanohana Greens in Dashi Broth - Spring's Delicate Flavor

This ohitashi from Loveteruo is so good! If you nail the boiling time, there's no bitterness and even kids love it - a perfect spring side dish!

  • ★Dashi broth200 cc
  • ★Soy sauce1.5 tsp
  • ★Mirin1.5 tsp
  • Salt (for blanching)a pinch

    Rinse 1 bunch of nanohana gently, soak in water for about 10 minutes, then cut in half lengthwise.

    Bring water to a boil in a pot, add a pinch of salt, and blanch the stems for about 30 seconds.

    Add the flower buds and blanch for another 30 seconds, then immediately plunge into ice water to stop the cooking.

    Once completely cooled, squeeze gently but firmly to remove excess water.

    In a serving dish, combine the ★ seasonings, add the nanohana, and let it marinate for a while.

    Lightly drain the excess liquid, arrange on a plate, and sprinkle with white sesame seeds if desired.

Tips

Keep the blanching time short - that's the key! Press the stem gently between your fingers to check tenderness; when it still has a slight bounce, it's done.
