This deli-style pumpkin salad is ready in just 5 minutes in the microwave! It's a super easy recipe perfect for lunchboxes too — you're gonna love it! 🎃

  • Kabocha squash (seeds removed, skin on)200g
  • Onion40g
  • Bacon15g
  • ★Mayonnaise2–3 tbsp
  • ★Granulated consommé (instant bouillon)1/4 tsp
  • ★Salta pinch
  • ★Peppera pinch

    Cut 200g kabocha squash so that the skin pieces are about 1 cm square. Thinly slice 40g onion and cut 15g bacon into thin strips.

    Place the kabocha, onion, and bacon in a microwave-safe container and cover with plastic wrap.

    Microwave at 600W for 5 minutes.

    If the kabocha is still firm, continue microwaving until it is soft.

    While still hot, add the ★ seasonings and mix well.

    Taste and adjust seasoning as needed. Once cooled, refrigerate before serving.
