Aromatic Gizzard with Green Onion and Salt (Negi-Shio Yaki)

This gizzard dish is seasoned like tan-shio! It's affordable and simple, but with an amazing chewy texture—perfect as a snack with drinks!

  • Gizzard1 pack (about 8 pieces)
  • Garlic (minced)1 clove
  • Lemonto taste
  • ★Green onion (coarsely chopped)1 stalk
  • ★Sesame seeds1 tbsp
  • ★Sesame oil1 tbsp
  • ★Salta pinch
  • ★Black peppera pinch

    Slice the gizzard (about 8 pieces) into 2-3mm thin slices. Boil in hot water and drain in a colander. If you're concerned about odor, add the white part of a green onion and thinly sliced ginger while boiling.

    Heat 1 tbsp of sesame oil and 1 clove of minced garlic in a frying pan. Once fragrant, add the gizzard and stir-fry. Add the ★ seasonings and mix well. Use slightly more salt and pepper to enhance the flavor.

    Plate the stir-fried gizzard and drizzle with lemon juice to your preference to finish.

Tips

You can also try seasoning raw gizzard with salt and pepper, then cooking it in sesame oil and garlic before adding the seasonings. For this method, cook until browned for a more aromatic result. Adding minced ginger while stir-frying will also enrich the flavor. The green part of the green onion is rich in aroma and nutrients, so make good use of it.
