Prepare the tart shell according to Recipe ID: 17667998 and shape it without creating air holes. Preheat the oven to 180℃.

Place pie weights on the tart shell and bake at 180℃ for 15 minutes. Remove the weights, brush the surface with beaten egg (extra), and bake for an additional 5-7 minutes.

Soften the 4.5g gelatin in 30g water, then dissolve completely using a microwave or double boiler method.

In a bowl, combine 2 eggs and 50g granulated sugar, mixing well. Mix until the sugar is mostly dissolved.

Pour 150g milk, 130g heavy cream, and 5cm vanilla bean into a saucepan. Heat over medium heat and remove from heat as soon as it begins to boil around the edges.

Gradually add the liquid from step ⑤ to the egg mixture in step ④, stirring constantly.

Strain the custard mixture through a fine sieve, add the dissolved gelatin, and mix well. Place the bottom of the bowl over ice water while stirring until the mixture begins to thicken.

Once the mixture reaches the right consistency, pour it into the baked tart shell from step ② and refrigerate until set.

Some custard mixture will remain—transfer it to a separate container for tasting.
