

This no-bake pudding tart sets with gelatin, so it's super easy to make! It's adorably cute and the fruit toppings make it absolutely perfect♪
Ingredients

- Heavy cream130g

Shape the tart shell following Recipe ID: 17667998. Do not poke air holes. Preheat the oven to 180℃.

Place pie weights on the tart shell and bake at 180℃ for 15 minutes. Remove the weights, brush the surface with beaten egg (not included in ingredients), and bake for an additional 5–7 minutes.

Bloom the gelatin (4.5g) in water (30g), then melt it completely using a microwave or double boiler.

In a bowl, combine 2 eggs and 50g of granulated sugar and mix well until the sugar is mostly dissolved.

In a saucepan, combine 150g of milk, 130g of heavy cream, and 5cm of vanilla bean. Heat over medium heat and turn off the heat just as the edges begin to simmer.

Gradually pour the hot liquid from step ⑤ into the egg mixture from step ④, stirring continuously.

Strain the pudding mixture through a fine sieve, then stir in the melted gelatin. Place the bowl over an ice bath and stir until the mixture thickens.

Once thickened, pour the pudding mixture into the baked tart shell and refrigerate to set.

Any leftover pudding mixture can be transferred to a separate container and enjoyed as a tasting portion.

Once set, decorate the tart with your choice of fruits to finish.

Tips
Make sure the gelatin is completely dissolved before adding it. During summer or if cutting the tart for photos, using 5.5g of gelatin will give a firmer, more stable result. Feel free to adjust the amount of granulated sugar in the pudding mixture to your taste.
