Juicy & Tender! Salt-Seasoned Chicken Breast Karaage

This salt karaage uses chicken breast marinated in mayonnaise — crispy on the outside, juicy on the inside, and absolutely delicious! ♪

Ingredients

  • Chicken breast2 pieces (approx. 600g)
  • Potato starch (katakuriko)7–8 tbsp
  • Salad oil (for frying)to taste
  • ★Sake1 tbsp
  • ★Salt1 tsp
  • ★Sugar1 tsp
  • ★Mayonnaise1 tbsp
  • ★Grated garlic (tube)approx. 1 cm
  • ★Grated ginger1/2 tsp
  • ★Black peppera pinch

    Cut 2 chicken breasts (approx. 600g) into bite-sized pieces by slicing on the diagonal.

    Place in a bowl, add the ★ seasonings, and massage well with your hands. Let rest for about 10 minutes (you can also marinate in the refrigerator for half a day).

    Add 7–8 tbsp of potato starch and mix with chopsticks. Let sit for 1–2 minutes, adjusting so that a little dry starch remains on the surface.

    Heat oil in a deep pan and fry the chicken until the surface turns golden brown. Finish with a sprinkle of coarsely ground black pepper if desired.

Tips

To keep the chicken breast tender, make sure to massage the marinade in thoroughly beforehand, and adjust the amount of potato starch to achieve a crispy coating on the outside.
