Warming Vegetable and Ginger Udon-Style Soup with Fragrant Onion

This onion soup is packed with ginger and loads of onion goodness! It warms you up from the inside out — perfect for chilly days when you need something cozy and comforting♪

Ingredients

  • Onion1 large
  • Ginger15–20g
  • Vegetable oila pinch
  • Water1200cc
  • Consommé cubes3
  • ★Soy sauce1–2 tsp
  • Parsley (optional)a pinch

    Cut 1 large onion in half, then slice thinly. Cut 15–20g of ginger into thin julienne strips.

    Heat a small amount of vegetable oil in a pot over medium heat. Add the onion and ginger and sauté until the onion is lightly golden and softened. Add 1200cc of water and 3 consommé cubes, then bring to a boil over high heat.

    Once boiling, reduce the heat and simmer for about 15 minutes, skimming off any foam. Add the ★ seasonings and adjust the taste. Garnish with a pinch of parsley if desired, and serve.

Tips

Feel free to add more vegetables of your choice — it tastes great with extra ingredients! Adjust the amount of soy sauce to your liking as you taste.
