

These cream croquettes are made with imitation crab and they're absolutely delicious! Crispy on the outside, creamy and gooey on the inside — you just can't stop at one♪
Ingredients

- All-purpose flour6 tbsp
- Milk500–550cc
- Imitation crab (crab sticks)160g
- Salt and peppera pinch
- ★All-purpose flour (for coating)to taste

- ★Breadcrumbs (fine)to taste
Directions

Thinly slice 1 onion and sauté in 60g of butter over low heat.

Once the onion becomes translucent, remove from heat, add 6 tbsp of all-purpose flour, and mix until no floury bits remain.

Return to heat over low to medium heat, and gradually add 500–550cc of milk while stirring continuously.

Once the mixture thickens, add 160g of imitation crab, season with a pinch of salt and pepper, and simmer on low heat for about 5 minutes.

Add more milk if desired to achieve a smooth, creamy consistency.

Transfer to a tray, let cool slightly, then cover tightly with plastic wrap and refrigerate for at least 30 minutes until firm.

Once chilled, divide into 12 equal portions and shape each into an oval (torpedo shape).

Coat each piece in the ★ ingredients in order: flour → beaten egg → fine breadcrumbs.

Heat oil to medium temperature and fry the croquettes, turning only once, until golden and crispy.

Serve with a sauce made by mixing equal parts ketchup, Worcestershire sauce, and Japanese-style sauce (okonomiyaki sauce) if desired. Enjoy!

Sauté the onion over low heat until sweet and golden — be careful not to burn it. Make sure to coat each croquette evenly with flour and egg before applying the breadcrumbs; using fine breadcrumbs gives the best crispy texture. If the mixture is too soft to shape, pop it in the freezer for a few minutes to firm up.
