Easy Madeleines Made with Pancake Mix

These madeleines are made with pancake mix — so easy! Just mix everything in one bowl and you're good to go♪

    Melt 100g of butter completely in the microwave.

    Preheat your oven to 180℃.

    Add the melted butter, 100g pancake mix, 80g sugar, and 2 eggs into a bowl and mix well with a spatula until combined.

    Pour the batter into aluminum madeleine molds, filling each about 60–70% full, then bake in the preheated 180℃ oven for 15–25 minutes.

    Once the madeleines are golden brown and the surfaces are set firm, they're done!

Tips

When filling the molds, stay within the fill line for a clean, even bake. You can also substitute vegetable oil for the butter if preferred.
