

This is miell's hall-of-fame recipe! It's sweet, savory, and so packed with umami that you just can't stop eating it with rice! ♪
Ingredients
3 servings- Beef (thinly sliced) or pork150-200g
- Shirataki noodles1 bag (320g)
- Grilled tofu (or regular tofu or thick-fried tofu)1/2-1 block
- Onion1
- Sesame oil for cooking1 tbsp
- Dashi stock (or water + dashi powder)150-200 cc
- ★Sugar (or your preferred sweetener)2-3 tbsp
- ★Mirin2 tbsp
- ★Soy sauce1 ladle full or more (70 cc+)
- ★Mentsuyu (noodle sauce)2 tbsp

Heat 1 tbsp sesame oil in a pot and add shirataki noodles (320g) cut into quarters. Sauté lightly.

Sautéing the shirataki removes any unwanted odor and helps the flavors absorb better.

Add 150-200 cc dashi stock to the pot with the shirataki and warm while removing any scum.

Once the stock comes to a boil, add the grilled tofu (1/2-1 block), onion (1), and the ★ seasonings (2-3 tbsp sugar, 2 tbsp mirin, and 70 cc+ soy sauce). Simmer for about 10 minutes.

If time allows, turn off the heat at this point and add the beef (150-200g) just before eating, then simmer for 7-8 minutes.

When serving over rice, check the seasoning balance and add 2 tbsp ★ mentsuyu to enhance the flavor.
Tips
This has a sweet and savory flavor in the Kanto (eastern) style. If you prefer a Kansai (western) style, reduce the amounts of soy sauce and sugar to taste. Adjust the seasonings to your preference. If you want to add chrysanthemum greens (shungiku), add them at the same time as the meat for a more vibrant presentation.
