Fluffy Banana Pound Cake

This banana pound cake is made with pancake mix and it's so easy! The freshly baked crust is perfectly crispy and the banana sweetness is just irresistible♪

    Slice a few banana slices thinly from the 2 bananas and set aside. Place the remaining banana in a bowl and roughly mash with a fork.

    In a separate bowl, combine the 200g pancake mix and 2 eggs. Heat 50g butter in the microwave until melted, then add the 30g sugar and 50ml milk. Mix everything together well.

    Preheat the oven to 170°C.

    Add the mashed banana to the batter and mix well with a spatula.

    Line a pound cake pan with parchment paper, pour in the batter, and arrange the thinly sliced banana on top.

    Bake at 170°C for 40 minutes.

Tips

Using half butter and half vegetable oil creates a better flavor balance and helps save on cost.
