

An easy marbled pound cake made with pancake mix! It's slightly sweet and wonderfully moist. You'll absolutely love it!
Ingredients
1 servings- Unsalted butter or cake margarine50g
- Sugar50g
- Vegetable oil30g

- Pancake mix (hot cake mix)150g
- ★Pure cocoa powder2 tbsp

Soften 50g of unsalted butter or cake margarine in the microwave and cream well with a whisk, being careful not to melt it completely.

Add 30g of vegetable oil and mix well.

Add 50g of sugar and mix until smooth.

Add 3 eggs and mix thoroughly until well combined.

Switch to a rubber spatula, add 150g of pancake mix, and fold gently to combine.

Divide the batter into two bowls. Sift 2 tbsp of ★pure cocoa powder into one bowl and mix well.

Pour both batters alternately into a pound cake pan (lightly oiled or buttered) in portions of about 1 tbsp each, distributing them randomly.

Use a skewer or stick to swirl the batter in the pan once or twice to create a marble pattern.

Drop the pan from a slight height 1-2 times to level the surface.

Place in an oven preheated to 180°C. After about 15 minutes of baking, make a light score down the center of the batter with a knife for a clean crack. Bake for 30-40 minutes total, checking occasionally. When a toothpick inserted comes out clean, it's done. If the surface begins to brown too much, cover with aluminum foil.

Once baked, let cool to room temperature, wrap tightly with plastic wrap, and store at room temperature. Refrigeration is not recommended.
