Finely chop 1/2 onion and place in a microwave-safe container. Drizzle with 1 tsp salad oil (extra).

Microwave the container at 600W for 2 minutes, then let it cool completely.

Place 300g ground beef and pork blend in a bowl, sprinkle with 1/4 tsp salt and a pinch of black pepper, and mix thoroughly until sticky.

Add the cooled onion, 1 beaten egg, 20g panko, and 1 tbsp milk. Mix well to combine.

In a separate bowl, combine 1 tbsp Marukome Plus Koji and 2 tbsp Bulldog Chuno Sauce.

Stack the 4 slices of cheese in pairs and cut them into a cross shape, then shape into a square.

Divide the meat mixture in half. Using both hands, toss the mixture back and forth to remove air, then wrap the cheese in the center and form into an oval shape.

Heat 1/2 tbsp salad oil in a frying pan over medium heat. Cook the hamburger for 3 minutes until golden brown on one side.

Flip and cook for another 2 minutes. Add 1 tbsp water (extra) and cover with a lid. Steam-cook over low heat for 5 minutes.

Transfer to a serving plate and arrange the vegetable garnishes around it.

Add 1 tbsp mirin and 1 tbsp sake to the prepared sauce mixture. In the same frying pan with the meat drippings, simmer the sauce briefly to reduce, then pour over the hamburger.
