Cut the green onion into 3-4 cm pieces. Remove the stem from the shimeji mushrooms and break them into small clusters. Score the chicken drumettes lightly with a knife to help the seasoning penetrate.

Place the green onion, shimeji mushrooms, and chicken drumettes in a heavy pot. Add all the ★ seasonings. Cover and simmer over low heat for 30-40 minutes until the chicken is very tender.

Transfer to a serving bowl and sprinkle with coarsely ground black pepper. Garnish with chopped green onion for color if desired.
