Golden Broth for Authentic Yosenabe

You can make restaurant-quality yosenabe broth with ingredients you have at home! Once you try this, you won't need store-bought broth anymore! ♪

  • Sake2 tbsp
  • Mirin2 tbsp
  • Light soy sauce1/4 cup

    Prepare dashi stock using store-bought powdered dashi if you prefer - it works wonderfully.

    Pour 4 cups of dashi stock into a pot, then add 2 tbsp sake, 2 tbsp mirin, 1/4 cup light soy sauce, and a pinch of salt in order.

    Add all ingredients to the pot, bring to a boil over heat to complete the broth.

    Add your favorite ingredients and enjoy the warm yosenabe. Chicken tsumire (meatballs) are highly recommended.

Tips

Adding light soy sauce will deepen the color, but the flavor remains mild and subtle, so feel free to use it without worry. You can adjust the salt to your preference.
