4 servings- Sake lees (sakekasu)100 g
- Water800 cc (4 cups)
- Sugar70 g

Pour 800 cc of water into a pot and heat over medium heat until it boils. Turn off the heat and add 100 g of sake lees broken into bite-sized pieces. Let it sit for 10 minutes.

Once the sake lees have softened, return the pot to medium heat and stir continuously until the sake lees dissolve completely and the mixture comes to a boil.

Once boiling, add 70 g of sugar and a pinch of salt. Stir well and bring to a brief boil to finish.
Tips
Using high-quality sake lees will enhance the flavor. For a more aromatic version, grate fresh ginger and add it to taste. Alternatively, add shredded kombu seaweed for a nice flavor accent.
