Ingredients

- ★Mayonnaise8 tbsp
- ★Lemon juice or vinegar and sugar2 tsp each
- ★Fresh parsley, minced (dried parsley OK)1 tbsp
- ★Onion, minced1/6
- ★Salt and peppera pinch

Crack 2 eggs into a microwave-safe container and poke several holes in the yolks with a toothpick.

Microwave without cover at 700W for 1.5–2 minutes. (For 500W, microwave for about 2.5 minutes.)

While still hot, use a whisk to finely break up the yolks.

Add the ★ seasonings (mayonnaise, lemon juice or vinegar and sugar, fresh parsley, onion, salt and pepper) and mix well.

Mix thoroughly until the mixture reaches a smooth, creamy texture, then serve.
Tips
Always pierce the egg yolks before microwaving to prevent them from bursting. White wine vinegar can be substituted for lemon juice if unavailable. Fresh parsley brings out the best flavor compared to dried.
