Fragrant Koji Steamed Cake - Easy Microwave Method

No eggs, milk, or sugar needed! This fluffy and moist steamed cake made with koji amazake is perfect for babies and toddlers. So gentle and delicious!

  • Cake flour70g
  • ★Baking powder1½ tsp

    Add 70g cake flour to a bowl and mix in the ★ baking powder thoroughly.

    Pour in 125ml koji amazake and whisk with a wire whisk until smooth.

    Line silicon or heat-resistant cups with paper cups and divide the batter evenly among them.

    Microwave (600W) for 2 minutes 30 seconds without covering. Insert a toothpick - if no batter sticks, it's done!

Tips

Use aluminum-free baking powder for peace of mind. These steamed cakes can be refrigerated and also freeze well when individually wrapped in plastic wrap. To reheat from frozen, microwave (600W) for about 20-30 seconds with the wrap still on.
