Moist Banana Muffins with Aromatic Banana Flavor

    Preheat the oven to 180°C.

    Place 110g cake flour and 4g baking powder in a plastic bag and shake well to combine.

    Mash 100g ripe banana with a fork.

    Add softened 40g butter, 20g vegetable oil, and 55g sugar to a bowl and mix well.

    Add 1 egg and mix until the mixture becomes a smooth cream.

    Add the mashed banana and 1 tbsp milk and mix. It's okay if the mixture appears separated.

    Add the flour mixture in 3 portions, gently mixing each time. Be careful not to overmix.

    Pour the batter into muffin cups and bake at 170°C for 25-30 minutes until done.

Tips

Sifting the flour in a plastic bag will result in a smoother texture. Adjust oven temperature and baking time according to your oven. Use fully ripe bananas to bring out the sweetness and aroma.
