  • Japanese green onion (negi)1/3

    Boil water in a pot and cook 1 udon noodle bundle until done. Drain well in a colander and set aside. Slice 1/3 of the green onion into thin strips.

    Heat 1 tbsp sesame oil in a frying pan over high heat. Add 1/2 tsp doubanjiang and the green onion, stir-frying for about 1 minute until the green onion softens. Add the ★ seasonings and mix well until the sauce comes to a boil.

    Add the cooked udon to the pan and stir-fry for about 3 minutes, mixing well so the sauce coats everything evenly. Then crack 1 egg directly into the pan and quickly stir until the egg is cooked through.

    Transfer to a serving dish and sprinkle aonori to taste. Serve immediately.

    If using frozen udon, simply microwave to heat and use for a quicker version.

    Feel free to customize with your favorite ingredients to suit your taste.

    If the dish is too rich or too sweet, adjust the amounts of sesame oil, mayonnaise, and sugar to your preference.

Tips

Having frozen udon on hand saves even more time. You can also break the egg into a bowl first before adding if you prefer.
