Canned Mackerel and Tomato Stew

This is AsaKoromo's recipe that you can whip up in just 10 minutes using canned mackerel and canned tomatoes! It goes amazingly well with both rice and pasta — totally a versatile dish I'm obsessed with♪

Ingredients

  • Canned mackerel in water2 cans (190g each)
  • Onion1/2 (about 120g)
  • Canned crushed tomatoes1 can (400g)
  • ★Olive oil1 tbsp
  • ★Salta pinch
  • ★Bouillon cube1
  • ★Ketchup1 tbsp
  • ★Black peppera pinch
  • ★Whole grain mustard1 tsp
  • ★Grated Parmesan cheeseoptional

    Slice the 1/2 onion. Adding garlic will enhance the flavor.

    Heat 1 tbsp olive oil in a frying pan and sauté the onion until softened. Add a pinch of salt to season.

    Add 1 can of crushed tomatoes, 2 cans of canned mackerel in water (including the liquid), 1 bouillon cube, and 1 tbsp ketchup. Simmer over medium heat for about 5 minutes. If the liquid splatters too much, reduce heat to low.

    Once the liquid has reduced slightly, add 1 tsp whole grain mustard and a pinch of black pepper. Simmer for about 1 minute and remove from heat.

    You can serve the mackerel shredded or in chunks, depending on your preference.

    Transfer to a serving dish and top with grated Parmesan cheese as desired.

    Adding herbs like olives, thyme, or basil will give it a more authentic flavor.
