Refreshing Chinese-Style Chicken Breast and Cucumber Salad

This chilled Chinese salad is absolutely delicious! It's light and refreshing, yet packed with rich flavors from soy sauce and sesame oil. You'll love every bite!

  • ★Soy sauce2 tbsp
  • ★Rice vinegar1 tbsp

    Julienne the 2 cucumbers. Heat the 2 chicken breasts in the microwave for about 2 minutes per side, or boil until cooked through. Let cool slightly, then shred by hand.

    Combine all the ★ seasonings (1 tbsp sugar, 2 tbsp soy sauce, 1 tbsp rice vinegar, 1 tbsp sesame oil, and 1 tbsp water) in a bowl and mix well to make the dressing.

    Once the chicken has cooled completely, combine with the cucumber and dressing. Toss everything together well.

    Chill in the refrigerator before serving. Since the cucumber releases moisture, adjust the saltiness of the dressing to your preference.

Tips

If using the microwave for the chicken, cook for about 2 minutes on each side. Since cucumber releases water as it sits, you may want to adjust the amount of dressing to your taste.
