Tender Simmered Freeze-Dried Tofu (Koya Dofu)

A recipe straight from Yuzuki's mom for melt-in-your-mouth Koya tofu! The dashi soaks all the way through and it's just so good ♪

Ingredients

  • Freeze-dried tofu (koya dofu)4
  • ★Sugar4 tbsp
  • ★Soy sauce1½ tbsp
  • ★Mirin1½ tbsp
  • ★Salt½ tsp
  • ★Water3 cups
  • ★Dashi stock powder (hon-dashi)1 heaping tsp

    Add all the ★ seasonings to a pot, mix well, then bring to a boil over medium heat.

    Add the 4 pieces of freeze-dried tofu without pre-soaking, spread them slightly in the pot, cover with a lid, and simmer over low heat for about 15 minutes until tender.

Tips

Simmering over low heat allows the flavors to absorb evenly and creates a more tender result.
