Fluffy Daikon and Juicy Pork Belly Oil-Mayo Stir-Fry

Quick and easy with the microwave! Pork belly and daikon radish pair perfectly with rice in this rich oil-mayo stir-fry. You'll love it!

Ingredients

  • Daikon radish (upper part)1/3 large
  • Long green onion (white part)1/2
  • Pork belly thin slices200g
  • Green onion (scallion)to taste
  • ★Salt and pepperto taste
  • ★Mayonnaise2 tbsp
  • ★Oyster sauce2-3 tbsp
  • ★Sugar1 tbsp
  • ★Water2 tbsp
  • ★Sake2 tsp

    Cut 1/3 of the large daikon radish (upper part) into bite-sized pieces and place in a microwave-safe bowl. Add a small amount of water, cover with plastic wrap, and microwave at 500W for about 10 minutes until lightly cooked through.

    Mix together 2-3 tbsp ★oyster sauce, 1 tbsp ★sugar, 2 tbsp ★water, and 2 tsp ★sake in a bowl.

    Finely chop the white part of 1/2 long green onion.

    Heat 2 tbsp ★mayonnaise in a frying pan over medium-low heat, then add the chopped green onion and sauté until fragrant.

    Cut 200g pork belly thin slices into bite-sized pieces, season with ★salt and pepper to taste, add to the pan, and cook over medium heat until the color changes.

    Drain the daikon well and add it to the pan, stirring to combine.

    Pour in the mixed ★ seasonings and stir-fry everything together, cooking down slightly.

    Scatter 1/3 green onion (scallion) over the top, turn off the heat, and serve.

Tips

Be careful not to overcook the daikon when microwaving; keep it slightly firm for better texture. If you prefer a stronger flavor, gradually increase the oyster sauce to taste.
