Ingredients

- Cake flour (all-purpose flour)50g
- Skim milk powder1 tbsp
- Sugar2 tsp

In summer (when room temperature is 25℃ or above), reduce the water from 200cc to 190cc to keep the dough from getting sticky and easier to handle.

Skim milk powder is optional. If you prefer to use regular milk instead, replace 50cc of the water with milk.

Add bread flour (250g), cake flour (50g), skim milk powder (1 tbsp), sugar (2 tsp), and all ★ ingredients into the bread machine, then start on the pizza dough or dough setting.

Once the dough is ready, skip the bench rest and second proofing — take the dough directly from the bread pan and place it onto a baking sheet lined with parchment paper.

Using your palms and fingers, spread the dough so the center (where toppings will go) is thin, and the outer edge (about 2cm wide) is thick — aiming for a crust height of 1.5–2cm.

Stretch the dough out to approximately 33cm in diameter.

Avoid using a rolling pin as much as possible — spreading by hand gives the dough a fluffier, more airy finish.

Use a fork to poke about 30 holes in the center of the dough (where the toppings go) to prevent it from puffing up during baking.

Even if the dough surface looks slightly dry, there's no need to use a spray bottle or damp cloth — just bake it as is.
