Slow-Baked Sweet Potatoes in the Oven – Meltingly Sweet Yakiimo

Paddy

The secret is baking them low and slow! The natural sweetness gets so rich and creamy, you'll be absolutely amazed by how good these turn out♪

Ingredients

2 servings
  • Sweet potatoesas many as fit on your baking tray

Directions

100 min
  1. 1

Wash the sweet potatoes (as many as fit on your baking tray) thoroughly. Wrap each one in aluminum foil. If they are large, cut them in half lengthwise, place a sheet of parchment paper over the cut side, then wrap with foil — this prevents the cut surfaces from sticking together once baked.

  2. 2

Place the sweet potatoes in the oven before it has preheated. Set the oven to 160℃ and bake for 90 minutes. Check doneness by inserting a skewer — if it slides through smoothly, they're ready. If not, continue baking in small increments of time.

  3. 3

Once baked, leave the sweet potatoes inside the oven as it cools down. This resting time further enhances their natural sweetness.

  4. 4

Sweet potatoes that have been harvested for about 2 weeks tend to develop a deeper, more concentrated natural sweetness, making them even more flavorful.

  5. 5

Baking without foil will result in a drier surface. While it comes down to personal preference, wrapping in foil produces a moister, more tender result.

  6. 6

The baked sweet potatoes can also be used in other recipes such as yokan (sweet bean jelly-style confection) for a delicious twist.

  7. 7

Another method involves soaking the sweet potatoes in salted water overnight before baking at 140℃ in the same way, but simply wrapping them in foil and baking is the recommended approach for ease and great results.

  8. 8

Bake a large batch at once and store in the freezer. They're delicious eaten slightly thawed just before serving.

  9. 9

Even when comparing four different varieties of sweet potatoes baked this way, each one comes out sweet and delicious in its own right.

Tips

Skipping the foil will cause the surface moisture to evaporate, leaving the sweet potatoes dried out. No preheating is needed — simply place them in the oven set to 160℃ and bake for 90 minutes. Leaving them in the oven after baking further brings out their sweetness.
