Pan-Fried Chicken Breast with Mayo-Ketchup Sauce

  • Salad oil (for cooking)to taste
  • All-purpose flour3 tbsp

  • ★Rice vinegar1 tsp
  • ★Mayonnaise4 tbsp
  • ★Ketchup1 tbsp
  • ★Milk2 tbsp
  • ★Honey1 tsp
  • ★Lemon juice1 tsp

    Slice 1 chicken breast into diagonal cuts (sogigiri). Season with a pinch of salt & pepper, 1 tsp sake, and 1 tsp rice vinegar, then let it marinate for at least 10 minutes.

    Add 4 tbsp mayonnaise, 1 tbsp ketchup, 2 tbsp milk, 1 tsp honey, and 1 tsp lemon juice to a small saucepan. Warm over low heat until just heated through, then remove from heat to make the sauce.

    Coat the marinated chicken in 3 tbsp all-purpose flour. Heat salad oil in a frying pan and cook the chicken on both sides until golden brown.

    Plate the cooked chicken and pour the sauce from step 2 over the top. Alternatively, you can toss the chicken directly in the sauce in the frying pan for an equally delicious result.

Tips

Letting the chicken marinate for at least 10 minutes will give it a deeper, more flavorful taste. Keep in mind that the level of tanginess in mayonnaise varies by brand, so feel free to adjust the amount to suit your preference.
