This sweet and savory chikuwa and shimeji stir-fry is super easy to make and perfect for lunchboxes — I just love how quick it comes together! ♪

  • Shimeji mushrooms1/2 bunch
  • ★Sugar1 tsp
  • ★Mirin1.5 tsp
  • ★Soy sauce1.5–2 tsp

    Cut 2 chikuwa into bite-sized pieces. Trim the base off 1/2 bunch of shimeji mushrooms and separate into small clusters.

    Heat oil in a frying pan over medium heat and stir-fry the chikuwa and shimeji mushrooms.

    Remove the pan from the heat, add the ★ seasonings, then return to low–medium heat and cook until the sauce coats everything.

    Once the sauce has thickened and looks glossy, it's ready to serve.
