Fill the hollow groove of each chikuwa piece with a generous amount of mayonnaise. (Mentaiko mayo is also delicious!)

Sprinkle breadcrumbs and parsley to taste over the mayonnaise.

Line a toaster oven tray with parchment paper or aluminum foil, place the chikuwa on top, and bake until the surface is lightly browned. This takes about 3 minutes.
