

This is Kaihachi-san's hall-of-fame recipe! The sweet and savory glazed atsuage is absolutely perfect with a bowl of rice — you won't be able to stop eating it!
Ingredients
2 servings- Atsuage (thick deep-fried tofu)1 bag
- Potato starch (katakuriko)to taste
- Toasted sesame seedsa pinch
- ★Soy sauce2 tbsp
- ★Mirin1 tbsp
- ★Sugar1 tbsp

Pour boiling water over 1 bag of atsuage to remove excess oil, then cut into 8 equal pieces. Pat dry and coat lightly with potato starch. Mix the ★ seasonings together in a small bowl.

Heat a generous amount of oil in a frying pan over medium heat, then fry the atsuage until golden brown on all sides.

Add the ★ seasonings and toss to coat the atsuage evenly.

Plate and sprinkle with a pinch of toasted sesame seeds to finish.
Tips
If you prefer a sweeter flavor, add a little extra sugar. Firm tofu-based atsuage is recommended. Make sure to brown all sides thoroughly for a nice crispy finish.
