Crispy Cucumber Salad with Sesame Oil and Ginger

    Cut 2 cucumbers into matchsticks about 5 cm long. Sprinkle with 1/2 tsp salt and let sit for at least 10 minutes. Discard the water that is released.

    Cut 1 knob of fresh ginger into thin julienne strips.

    Place the drained cucumbers, ginger, and 1 tsp sesame oil into a zip-lock bag and massage everything together well. This method keeps cleanup to a minimum.

    Chill in the refrigerator before serving.

Tips

For the best flavor, add the ginger and sesame oil after the cucumbers have been salted for at least 10 minutes. If you're in a hurry, you can reduce the salt slightly and add the sesame oil right away. Adjust the amount of salt depending on the size of your cucumbers.
