Cream 50g butter until soft, then add 50g sugar in 2-3 portions, mixing until pale and fluffy.

Add 1 egg (S size) in 2-3 portions, mixing well after each addition to prevent separation.

Add 50g cake flour and fold gently until combined. Transfer to a piping bag and set aside temporarily.

Mix the bread dough ingredients (200g bread flour, 25g sugar, 4g salt, 3g dry yeast, and 140g milk) together, then knead on a work surface.

Once the dough comes together, add 25g butter and continue kneading. Perform the first rise until the dough doubles in size.

After fermentation, punch down the dough, divide into 9 equal portions, and let rest for 15 minutes (bench time).

Shape the dough into balls and place evenly spaced on a baking sheet. Perform the second rise until the dough puffs up to 1.5-2 times its original size.

After the second rise, pipe the cookie dough onto the center of each bun, covering about 2/3 of the surface.
